Farm Description

Send off a good coffee for decaffeination, and get a good coffee back in return. That's been our experience at least, and this latest Carmo de Minas lot is no exception. Made up of two pulp-natural coffees that we sold on Sweet Marias - Fazendas IP and Borgas - this resulting decaf holds much of the sweetness, body, and cleanliness we value from Carmo coffees in the first place. Both coffees are Yellow Bourbon varietal separations. All of our custom decafs are processed at the Swiss Water plant in Vancouver, where caffeine is extracted using a water soaking technique, without any chemicals whatsoever. The resulting coffees cup with much of their original characteristics, and a relative clarity in the profile.

Cupping Notes

The dry grounds have a nutty sweetness. It's a Brazil, and so we expect as much, but it actually builds convincing sweetness at City+, and with some fruited notes building as well. The wet grounds are pretty saturated with a smell of sugar-coated roasted nuts, and a canned fruit smell on the break. The cup really tastes close to a nice, non-decaf, Brazil actually. I mean, there are grain/rye notes low in the profile, but the dominant features are sweetness, roasted nut, and mild fruits. I think the decaf process actually helps by muting some of the unclean aspects found in the finish of Brazil coffees. A nice versatile SWP decaf, that will make a great espresso option too.
