Raw sugar notes came through right from the start in this Flores lot, with interesting accents of semi-refined cane sugar, ginger bread and nutmeg. I also picked up on a mild herbal note, like dried basil. The wet aroma smelled balanced and clean, and had a sweet-spiced note, like the brown sugar and cinnamon crust on a coffee cake. The coffee showed very clean sweetness in both light and medium roasts, and the lighter of the two had a tart acidic impression, which was a nice surprise. City roasts are a pleasure to drink, with balanced sweet and bittering tones, and very subtle top note accents of whole spices. It's an incredible dark roast option as well, with milky body, and mild acidity making it a great espresso option too. I really enjoyed my dark roast as a full immersion brew, thick bodied, opaque chocolate flavors that fade to some smokey roasted nibs in the aftertaste.

This lot comes from two farmers in Bajawa region of the island of Flores, Om Albertus, and Om Reti. "Om" is commonly used as a term of endearment, and respect, and generally translates to "uncle" or "aunt". We traveled with Albert a few years back, which at that time, we bought his coffee under the name "Wawo Muda", which you may remember. Now he and his partner Reti have their own coffee site near Bajawa town where they are processing coffee down to dried parchment. The soil is rich in nutrients, and they are able to grow coffee using fully organic farm practices, though they are not certified at this time. This is a wet process coffee, and some might be surprised to find that it fits right in next to a lot of our wet process Central American coffees. That is to say, it has well-balanced bittersweetness, and acidity, and isn't earthy or rustic like a typical wet hulled Indonesian coffee. The coffee in this region is grown between altitudes of 1350 and 1550 meters above sea level.
