Haji Iyan is such a delicious, versatile, and clean wet process Java arrival. The scent of the dry fragrance smelled sweet, and refined, with accents of raw sugar notes, and hints of honey wheat and raisin. Pouring hot water on the grounds raised a very nice burnt sugar scent, caramelized and sweet, with glimpses of interesting tea notes, and earthy dried fig. Light roasts present clean sweetness, and contrasting acidity that has hints of citrus and black tea. The underlying flavor is reminiscent of sugar in the raw, demerara, sucanat, those sorts of natural sweeteners. The cup cools to accents of orange tea, and golden raisin. My Full City roast that was just shy of 2nd Cracks showed tangy roast flavors of dark chocolate bar, and cocoa nibs, with a fruited accents of tamarind. Acidity was very tame at Full City, and body scored 9 (out of 10), which should please those after a coffee that holds up to dark roasts, as well as ones that double nicely as espresso.

This lot is from a cherry collector called Haji Iyan in Patuha region, Ciwidey. "Collectors" are intermediaries of sorts who buy partially processed coffee and full coffee cherry from small scale farmers and then often process the coffee down to the dried seed/bean. Although in this case, Iyan is delivering the cherries to a central washing station nearby that is operated by Pak Gunawan, who's "Anaerobic Honey Patuha" coffee we also have right now. (As an aside, this is a great opportunity to taste the impact processing has on flavor by putting these two coffees from the same region, and same mill, on the table). Whereas many collectors create large blends of all the coffee they buy, Iyan and Gunawan pay special attention to separating by region, these smaller lot sizes adding a layer of quality control, not to mention more specific provenance. This is a fully washed coffee, which is pretty common in Java. The cup flavors come off very clean, and well-balanced, and in many ways, not unlike a clean washed Central American coffee.
