This blend of coffees from the Villatoro family has well-balanced flavors, and moderate acidity, making it a great dual-use coffee for brew and espresso. Grinding the coffee released a scent of light brown sugar, traces of almond and pistachio nut, and smelled quite clean overall. The brown sugar aspects gained steam after pouring hot water (figuratively and literally!), and the wet aroma showed aspects of candied nuts, caramelized sugars, and cocoa. My City+ roast showed well-developed sweetness that came off like simple syrup made with brown sugar, and silky body helped impress the sweet flavor notes in the  aftertaste. The cup cooled to hints of Jordan almonds, pecan pie, and caramel popcorn. The cup characteristics in darker roasts really push this coffee's 'espresso' factor. My Full City roast was very well-rounded in terms of milder acidity, and bittersweet chocolate notes at the front of the cup. Body felt much more creamy on the tongue too.

This coffee is made up of two lots of coffee from the Villatoro family, a group we buy coffee from in the Huehuetenango highlands. This lot was split 10 bags each between Evelio and Aler, who have neighboring plots in Peña Blanca town, La Libertad. The wet mill is shared by the family and sits at 1750 meters above sea level, the farms stretching up another 100 meters. They pull water from springs above, but are working to capture clean water from the river that runs below the farm and is punctuated by a 50 foot waterfall a bout 100 meters from the farm! This coffee comes to us through a joint-effort of a local micro-mill owner who is able to process and separate the micro-lots we approve, and a highly sophisticated dry-mill who handle the finishing touches and export the coffees for us.
