Nicaragua El Buey Pink Bourbon

The sweetness in this Pink Bourbon should have wide appeal. Butter cream frosting, sugar in the raw, and a hint of dark honey, along with top notes of apple, cinnamon, and a spark of acidity. City to Full City. Good for espresso.

There's a nicely layered sweetness found in the fragrance, with notes of brown sugar, malt syrup and and aromatic buttery caramel. The steam that comes up when brewing seems infused with a perfumed sweetness like light caramels with some buttery complexity, hints of toasted raw sugar, and a subtle cocoa note behind it. I found the cup showed a nice balance of sweetness and acidity for Nicaraguan coffee at City and City+ roast levels. It presents a very sweet backdrop that should bring wide appeal. But there's more going on in the cup, and the sweet flavors unfold to top notes that included butter cream frosting, sugar in the raw, and a hint of dark honey that also impacted the cup aroma. A citrus note added a nice vibrant spark to the cup, but is still very well integrated into the sweetness. The cup profile had aromatic accents of cinnamon stick and red apple. Our Full City roast retained some of the spiced hints in the aroma, and along with dark cocoa, yielded a profile of Mexican hot cocoa, with some high cocoa solids dark chocolate notes too. All in all this Pink Bourbon lot from El Buey makes such sweet brewed coffee, and the moderate complexity makes it an interesting addition to our washed Central American offerings.

This coffee is another from La Bastilla Estate, a 300 hectare plantation in the highlands of Jinotega. A little over half of the estate is currently in production, average altitude is 1250 meters. Situated in-between nature reserves, La Bastilla benefits from the shade from the natural forest. They obtained RFA certification over a decade ago, and the abundance of trees on the farm provide ample shade canopy for the coffee to slowly mature beneath (there's a great photo of the natural shade canopy in our image gallery). The estate is split into 18 individual plots, this being from the plot El Buey ("the Ox"). They put a lot of effort into separating lots instead of blending together, as blending can lower the overall quality, mixing good with bad. A great thing for lot selection on our end too. This is also a "Pink Bourbon" cultivar separation. I use quotes here, because the origins of this pinkish-orange variety are still a bit of a mystery. Initially touted to be a natural cross of Red and Yellow Bourbon, recent genetic studies of organic material from this plant has linked it to Ethiopian landrace - that is, an heirloom variety endemic to Ethiopia. That might explain the nuanced cup flavors that are sometimes found in this variety. But until there's conclusive scientific validation, we'll continue using the "Pink Bourbon" name, even if it might not actually be Bourbon.
