Full Cupping Notes

The dry fragrance had an herbal scent of teas like chamomile and Yerba Matte, with a mild, malty sweetness of sugar in the raw, and brown bread. Sweetness moved closer to the forefront after pouring hot water on the grounds, but the herbaceous tea notes were still right behind it. A brown sugar note occupied quite a bit of space in the steam, with hints of leafy teas, and some toasted grain filling in the cracks. The cup sweetness gave way to an array of herbal notes that brought an interesting aroma to the flavor profiles. The sweetness had that malty aspect in the cup too, and reminded me of malted soda, like Malta if you've ever had it. It's a non-alcoholic soda made with malted grain and hops (Goya and Pony are a couple other common brands out there). Top note accents like buckwheat tea, lemon zest, and an array of toasted grain notes came through as the coffee cooled, with hints of wood spices, and hint of spearmint marking the finish. I found City+ to be where sweetness really came into play, and my lighter attempts lacked that development.  Altiplanos Java will undoubtably make a crowd pleasing bittersweet dark roast too, though I haven't tried one myself yet.

I generally don't fixate on cultivar when cupping our Nicaraguas, most being Caturra or hybrid types that lend to balanced bittersweetness, and mild-to-moderate acidity when grown at the upper altitudes. But when I hear "Java" (or Gesha for that matter!), my ears perk up a bit. This unique cultivar came to Central America by way of Cameroon, through transfer and cultivation on the isle of Java. It resembles some Ethiopian heirlooms in physical appearance, and also tends to produce aromatic cup when roasted light. In a word, it's interesting! Most farms we buy Java from only grow a small amount. Needless to say, we were pretty excited to come across this uncharacteristically large lot from Los Altiplanos, who've gone all in with this unique cultivar. Their 78 hectare farm has a large portion of the farm devoted to Java, and this lot we selected was a whopping 49 bags! The Los Altiplanos farm is owned and managed by Ricardo Cuadra, whose family have been growing coffee in this region for more than 100 years. His farm is located near Jinotega, near the mountain reserve of Datanli el Diablo, with altitudes reaching upwards of 1300 meters. We have not visited Ricardo's farm, but hope to next harvest.
