Light roasts have compelling raw sugar flavors, with a moderate level of acidity, orange accents, and spiced aroma. Dark roasts are low toned and intense, perfect for espresso and milk drinks. City to Full City+. Good for espresso.
Wilfredo's coffee smelled great in both light and dark roasts. My City roast had a deep sweetness that was intertwined with hints of spiced cola. The wet aroma was so sweet, and the spiced accents brought a lot of depth to the smells, like dark brown sugar blended with cinnamon powder. Full City roast was centered around bittersweetness, with the intensity of a dark hot cocoa drink. Perhaps the smells leading into it had some influence over my impression of the brew, but I picked up a spiced Cola sweetness up front that was delicious, and complex. At City roast level, the coffee offered compelling raw sugar flavors, with a moderate level of acidity that carried a fruited aspect, a bit like orange. The coffee cooled to accents of lemon grass, and tamarind, with various raw sugar notes holding it all together. My Full City roast was right at the edge of 2nd Crack. It still offered impressive sweetness, though a lot more low toned and intense. The range of flavors was also narrower, not so much fruited like the City roast, but did offer hints of spice, and fruity tobacco, that were quite nice! This will definitely stand out as single origin on the espresso bar too.
The farm of Wilfredo Perez is located in the micro region of Peña Blanca within the sub-municipality of La Libertad, Huehuetenango. This coffee comes to us through a joint-effort of a local micro-mill owner who is able to process and separate the micro-lots we approve, and a highly sophisticated dry-mill who handle the finishing touches and export the coffees for us. It helps us greatly to enlist local support, folks who not only know the land but also the local farmers. We put in quite a bit of work ourselves, tasting many rounds of samples in order to identify the premium-level coffees, as well as make several trips to the area each year meeting with farmers and collecting information. This particular lot is 15 bags, and the second time now that we've been able to buy a large enough lot from him to offer on it's own. You can read more about "Proyecto Xinabajul" HERE.
