The dry fragrance was accented by raw sugars and mild spice notes, with a hint of toffee-coated nuts. Adding hot water brings out a moderate intensity of dark caramel, and moderate bittersweetness. I found caramel sweetness and background roast bittering to be central to the cup at City+ and Full City, allowing top notes to play off the balanced base flavors. When the coffee cooled to a nice drinking temperature, a top note of black tea, started to take shape, along with accents of candied nut, and green apple. Acidity is mild-to-moderate at City+ (I noted "apple"), but is rounded off quite a bit at Full City and beyond for those looking for a lower acid cup. There was an interesting interplay of bittersweetness and savory accents in my darker roasts, a bit like chocolate malted beer grains, leading to a Stout-like beer hint in the long finish. Espresso shots at Full City are chocolate-forward, low-toned, and bittersweet. But there's also a flash of lemon at first sip that has a rindy quality, but then quickly disappears. The texture is quite creamy in mouthfeel too, which has a lasting impact on the long aftertaste.

Punta del Cerro is the newest farm to come under the care of Aurelio Villatoro. You may recognize his name associated with his other farms, "Finca La Esperanza" and "Finca El Regalito". Both farms are renowned for producing exceptional quality coffees, and have been recognized by many an international jury, and roasters around the world. It's also a well-known fact that Aurelio is one of the kindest, gentlest souls you'll ever meet, which certainly helps sweeten the deal! Punta del Cerro sits at an altitude of 1750 meters above sea level near Peña Roja town in La Libertad, and is planted in Bourbon and Caturra coffee cultivars. Aurelio's family have deep coffee roots in the region and have built a network that extends well beyond the extended family. They act as representatives of smallholder coffee farmers in the region, to some extent, assisting with post-harvest processing, and working closely with international buyers who pay premium prices for high quality coffee. He and his brother Aler recently erected a wet mill in Injerto town that is set up to handle a fairly high volume of coffee during the harvest peak. They are set up with plenty of outdoor patio space, as well as an indoor drying room that at the moment is reserved for natural and honey process coffees.
