La Libertad decaf offers mild sweetness amidst a cocoa powder flavor, that together remind me of a chocolate biscuits. Middle roasts are balanced, sweetened baking chocolate, fading to an earth-toned cocoa note that reminds me of carob, and a cinnamon toast accent. City+ to Full City+. Good for espresso.
La Libertad as decaf has a toffee malt smell, as well as a caramelizing sugar smell that reminds me of what comes off a fresh baked loaf of wheat bread. Deeper roasting brings out cacao-like bittersweetness, which you can really smell in the wet aroma, along with ribbons of caramel-like sweetness. The cup has a mild sweetness that is matched by a cocoa powder flavor, together remind me of a chocolate biscotti (especially in our Full City roast). For me, this decaf is all about bittersweet chocolate flavors that come with City+ and Full City roasting, dark cocoa flavors up front taste like lightly sweetened baking chocolate, fading to an earth-toned cocoa note that reminds me of carob, and a spice and wheat notes accenting the finish have a cinnamon wheat bread appeal. Full City roasts make fantastic decaf espresso shots on it's own, and I think this would be great as 2/3 of a blend with our Ethiopia Limu Cooperative SWP Decaf.
La Libertad is the Municipality in the Huehuetenango region where this coffee is from. The farmers who contributed to this lot are part of our Proyecto Xinabajul, an ongoing project of ours in conjunction with a local producer and miller in Huehue town, where we search out 85+ point coffees from the surrounding coffee growing hamlets and pay a premium in order to keep separate from bulk blending. This is another of our custom decafs that we have processed by the folks at Swiss up in Canada. Both lots started off as really strong 'regular' coffees, and so we were confident they would make great great decaf - turns out we were right. There are huge advantages to sending off your own coffees for decaffeination - the biggest being selecting quality lots in order to make a quality decaf. We don't think decaf drinkers should be relegated to what seems to be the standard decaf cup profile - low sweetness, cardboard, and a thin body. And it's also satisfying to know where your coffee comes from, which is often hard to find with decaf offerings. So here you are, a decaf, that tastes surprisingly 'un-decaf', and one that comes with a story. Ta-da!
