This wet hulled Flores coffee lies in stark contrast to the more standard washed lots, and gives our intense, earth-toned Sumatras a run for their money. The fragrance in the dry grounds showed a moderate level of sweetness accented by green foresty notes, and accents of rustic sweeteners, like sorghum syrup, with its sweet and savory elements. The wet aroma showed very nice earth tones, sappy sweet, and accents of green herbs. The brew is very big bodied, especially at Full City and beyond. My Full City roast that was a few degrees shy of 2nd Crack was super thick in texture, which helped convey inky chocolate roast flavors flecked with notes of pine oil, loose leaf pipe tobacco, and aromatic wood. The cup is very complex, and fits in well next to coffees from Lintong, or wet hulled Sulawesi. Wawo Wae is also a great coffee for milk drinks and espresso, and body is downright milky in and of itself!

The farms where this coffee is from are in close proximity to the Wawo Muda volcano on Flores island, benefiting from the nutrient rich soil in this high altitude zone (1500+ meters above sea level). Farmers in this area tend to grow a mix of older Typica trees and S795, commonly referred to as "Jember", a natural mutation of Typica and Liberica. Coffee is typically traded through cooperatives or coffee "collectors", this being the latter. It's from three different collectors who gather from farmer groups in nearby areas such as Wolo Bobo, and Bajawa, all of it processed at a central station called Wawo Wae. Unlike many of our wet process Floresian coffees, this wet hulled lot shares many similarities in the cup with rustic Sumatran coffee. When roasted dark, it produced brooding low tones and earthy sweetness, low acidity, and big body. If you're a fan of wet hulled coffees, Wawo Wae will fit right into your rotation.
