Well balanced profile at a variety of roast levels. Unrefined sugar, dark cocoa, with a flash of acidity when kept to the lighter end of the spectrum. City+ to Full City+. Good for espresso.

The fragrance showed very nice roast intensity when roasted to City+ and Full City+ levels. Pouring hot water on the grounds brought out a scent of caramel glaze, cocoa, and a lightly fruited accent. Caficultoras El Tambo is balanced and bittersweet. It's an approachable cup with convincing flavors of unrefined sugars, and dark cocoa when hot, that cools to nuanced top notes. I think City+ roast level is a great place to start, where sweetness is well-developed, and the brew shows substantial body. There's a nice flash of acidity at this roast level too, as well as a subtle accent of peach. Full City+ roasts maintain a substantial level of sweetness too, folded into rich flavors of high % dark chocolate bar, and powdery cocoa in the aftertaste. This will make a great espresso option too.

This coffee comes from three women in El Tambo; Deisy Cortés, Rebeca Gómez, and Erika Vásquez. They are members of a women's coffee association in the region, called AMACA (Asociación de Mujeres Productoras Agropecuarias del Cauca). The group consists of about 140 female coffee producers, whose farms span a range of 1700 - 1800 meters, and are mostly planted in Caturra, Variedad Colombia and Castillo. AMACA's mission statement is to improve the livelihood of the women who are members, and they've put this into action by reinvesting premiums in things like agronomical assistance, and wet mills to many farmer members. Tambo is located in the Department of Cauca, just a few miles West of Popayan, which affords convenient access from the local airport. The altitude The coffee was purchased through the Pillimué family in San Antonio, Inzá, who we buy most of our Cauca coffees from. Their family has a long history with a local association we used to buy coffee through for several years. They then ventured out on their own by building a small warehouse next to their home in San Antonio, and eventually a cupping lab where they often train local farmers and family members to roast, taste, and assess their own coffees.
