A crowd pleasing coffee at a wide roast range. Light roast are cleanly sweet, caramel, accents of praline nuts, and candied pecan. Dark roasts are deep-toned, smokey cocoa, dark chocolate, and cacao nibs. City to Full City+.

I picked up on pleasantly sweet notes of baked goods in the dry fragrance, with malty expressions in the wet aroma, along with notes of toffee peanut, caramel, and some soft bittering roast tones. Our darker roast was another story, and smelled very bittersweet, with notes of smoked chocolate and a hint of toasted barley. The cup brought out cleanly sweet flavors of caramel and brown sugar, with creamy accents of praline nuts, and candied pecans. This going to be a real crowd pleaser, even roasted light. City roasts have a nice bright spot that should stand out to those looking for it, but certainly not be a detractor for the acidity averse crowd. Full City roasts have smokey cocoa notes, nibs (roasted cacao pieces), dark cocoa powder, and more. Body is a little thin for espresso in my assessment, but could certainly find its place as a component in an espresso blend.

The Sierra Madre de Chiapas mountain range cuts across a good portion of Central America, and is home to countless coffee farms in Mexico's southern Chiapas region. The area is made up of mostly small scale coffee farmers, many with just a couple hectares of land. The coffee that makes up this lot is pulled from the higher altitude zones that span a range of 1200 to 1900 meters above sea level. Most of the farms are planted in older Typica and Bourbon types, with Caturra, and Catuaí cultivars mixed in. Each farmer processes their own coffee at home using small depulping equipment (motorized or hand-crank), fermenting in cement tanks, and then typically drying the coffee on rooftop patios. This lot is NOP Organic certified.
