Quispe is a coffee that does well across the roast spectrum. Its jammy and sweet like darker grapes and berries at a city level. It's so fruit forward, almost like a grape fruit roll up. The fruit sweetness is more docile at a city+ level. Raisin is the fruit most noticeable and it meshes nicely with a sultry fudge note. The finish on the more developed roast is like Assam tea. Quispe's mouth feel is hefty, almost like melted butter. Its finish is sweet like brown sugar. This is a big coffee by Peruvian standards. One not to be missed. City to City+.

San Juan del Oro is a goldmine for beautiful coffees. You need to travel through wild frontiers to find them. You need to dig deep. You need to put in the time but when you find them they are a miraculous discovery. Within that valley there is one family doing it just a little bit better than most; the Quispe family. This particular lot is a combination lot produced by Edwin Llacta Quispe and Cosme Para Quispe. Their small farms are located at 1900 masl and planted with Typica. They manually process coffee beans from their cherry skins using hand-crank machines. They ferment in small, concrete tanks for roughly 12 hours before washing in those same tanks. After washing they carry the parchment coffee down to the drying patios at the cooperative where its dried down to proper moisture levels between 10 - 12%.
Our Quispe lot is a fruit forward coffee. Heavy, sweet notes of tamarind and raisin persist in the dry fragrance of the coffee. Those aromatics morph into darker sugars like muscovado or Colombian panela, a very similar style of sugar, in the break. Quispe is a coffee that does well across the roast spectrum.
