This is a certified Fair Trade and Organic Peru decaf from an association in the Palto region of the Amazonas. The association is farmer-owned, and provides agronomical and business support to farm members with a goal of improving financial returns for these investments. Being certified as Organic and FT helps to add value to the coffee too, certifications that might not be afforded without the collective financial resources. This coffee was sourced by a local importer here in the Bay Area, who then had it decaffeinated using a water processing method. The results are a cup much closer to the non-decaf counterpart, with sweetness and cleanliness that are often devoid in other decaf offers we taste! If you have the ability to see the coffee as it's roasting, watch this one. Decafs are notorious for not having much of a 'snap' when hitting 1st crack and so easy to take too far. If you're using a Behmor, or another roaster without access to the coffee, just listen closely around the time you would normally expect the coffee to crack, and you'll catch some intermittent popping that will help gauge finish time.

The dry fragrance has a nice malt and brown sugar smell, relatively 'clean' around the edges, and with dry fruit hints. The wet aroma sticks to this configuration, and a sort of malt-grain smell is accompanied by welcoming molasses like sweet scent. The hot brewed coffee shows a near clear sweetness, most like simple syrup. As it cools, the sweetness shifts to less refined sugars, brown sugar or muscavado, replete with a molasses quality. The finish is surprisingly clean for decaf, if not a bit abrupt, but not without leaving traces of cinnamon and all-spice on the palate. A balanced decaf, and one that bodes well on up to 2nd snaps in the roaster, though we prefer somewhere between City+ and Full City.
