This is an individual farmer lot from northern Peru, part of a larger Cooperative built on promoting agricultural sustainability and increased production in the region. Farmer members benefit from aggregate buying power in obtaining agricultural supplies, wet mill upgrading, and premiums have helped to pay for organic and Fair Trade certifications. Membership is nearing the 200 mark, and the cultivated area has grown to almost 600 hectares. Doing the math, these farms are on average 3 hectares, which is a typical farm size for Peru, traditionally a "small-holder" system in every sense of the word. Typica is the dominant species, and the average altitude for these members is between 1300 and 1700 meters.
The the dry fragrance has a buttery sweetness and roasted nut. A nice mix, and Full City roasts pull out baking spice elements as well. But the wet aroma is where it's at, the sweetness is fully realized, a saturated sweetness in the steam. City+ roasts have a tartaric aspect to them, like white grape juice, that ties flavors of honey and pistachio together. Full City roasts have a sweet, dark toffee flavor, along with allusions to dark, fleshy fruits, fading into cocoa powder territory. A clean cup, and dense bean that will handle a wide range of roasts. Being so dense, I hit this one a little hard with heat during the drying stage, backing off just before first crack to avoid explosive snaps.
