This coffee is from the "Bauka" coffee farmer group in the Aiyura Valley, Papua New Guinea. The group was founded in 2004 with a goal of giving women the opportunity to attain financial independence for themselves and their families using coffee farming as their vehicle. To be a bit more specific, these women were already quite entrenched in coffee production. However, once harvest and processing was completed, it was the men who would transport the coffee to the marketplace, receiving the payment. This is now changing. Together, they manage around 100 hectares of coffee, split into small plots. This lot is actually an "A/X" quality blend of coffees from each of the plots, selected from lot separations based on the cup quality. They have their own mill onsite, where all the coffees are processed, and they are then laid out to dry on raised beds, some covered, such as the one in the first photo below.
The dry fragrance is filled with caramel and fruit smells, and an earthy quality too, like a greenhouse/mossy. The wet aromatics show spices like nutmeg and mace, along with burned sugars. There's ripe fruit too that comes up in the steam - mixed berries and papaya - and a raw tobacco smell comes up on the break. The cup definitely builds flavors of rustic sugars like rice and sorghum syrups. There's a peet note too, and some aromatic cedar toward the back end. This coffee cups very similar to the best Sumatras we purchase, bold body, a thick rustic sweetness, low acid, and mild fruited top notes. Versatile in the roaster too, our best roasts were in the middle City+ roast range.
