This coffee comes from a small, 2 hectare farm called Finca La Lagunita. This family farm is run by Renan Perez and his 2 sons, and has been in the family for many decades. Like most of the neighbors in La Laguna Cubite, where his farm is located, Renan's farm is planted in disease resistant cultivars like IHCAFE 90 and Icatu, but also in older cultivars like Pacas. (this may account for some of the sweet, herbal flavors tasted in the cup - especially lighter roasts). Altitude in this area is on the higher side for Honduras, Renan's farm sitting between 1630 and 1700 meters. A versatile coffee in the roaster, you'll be surprised how much the flavor shifts from one end of the spectrum to the other.

The dry grounds are laced with potent brown sugar sweetness, along with fragrant hints of sweet spice and mild green herbs. The latter characteristic builds momentum in the wet aroma at City+ roast level and comes off like candied basil leaf, though caramel sugars are the predominant backdrop note. Medium roasts are loaded with pungent burned sugar and chocolate roast flavors in the brew. As the coffee cools they fall away a bit, revealing this coffee's sweet, herbal side. A 'greenish' yet sweet, fresh flavor that I can best describe as celery soda comes through, and a dried apple note adds subtle tartness to the cup. This is a full-bodied coffee, even when roasted on the lighter end of the roast spectrum, but Full City roasting brings this feature to its apex. Darker roasts also broaden the range of chocolate roast flavors. Give this San Sebastian coffee a whirl at City all the way to Full City+. You'll be surprised how much the flavor shifts from one end of the spectrum to the other. We sure were.
