Cuilco is a micro-region in the Huehuetenango highlands, part of La Libertad municipality. This lot is a blend of a two Cuilco farms, one is actually from the owner/operator of the farm Regalito, Aurelio Villatoro, a beautiful coffee we buy annually consistently ranking with our best scoring Huehuetenango coffees. The other is from a neighboring farm of the Lopez family, and an offer sample that clearly needed saving from much larger, regional blends. We cupped many great samples from the area, and were able to bulk together this 10 bag micro lot offer. These two farms are mainly planted with a mix of Caturra and Bourbon varietals, and the altitude varies between them as low as 1,500 meters on up to 1,750.
This microlot from the Cuilco region has a blend of raw sugar and tea notes throughout the profile. The dry grounds of City roasts have a loose-leaf black tea and honey smell, with a touch of dried florals in the lighter roast levels. Breaking the wet crust, you're greeted by a strong caramel sauce sweetness, with a burned sugar smell too like crisp br_l©e crust. The cup has a roasted cacao-like flavor, which if you haven't tasted, is actually quite bitter on it's own. But in this context, provides a wonderful counterbalance to a thick sense of burned sugars. Bitter and sweet tones are what makes up the core of the cup (and we like this in our "daily drinking" types), but goes beyond, with cherry and red raisin accents, and at Fulll City finds a nice flavor of German chocolate cake with berry filling. We like this coffee in the City+/FC roast range - a "big" bodied, sweet cup - but is also an ideal candidate for milk drinks, easily supporting the weight and the contrasting flavor of cream. There's a nice level of acidity too, not overpowering, but mouth cleansing and like what you find in fresh fruit. Enjoy as brewed coffee, espresso, and at a fairly wide range of roast levels.
