Roast Recommendations City+ to Full City is a great starting range for the profile described. For those who appreciate roast tones, don't be afraid of 2nd snaps either.

I think this is the first time I've seen coffee from Flores island on our green offer list. It's a lot that peaked our interest and excitement when it was offered a couple months back. The coffee is from a farmer group in a rather isolated part of the island called "Wae Rebo". The area is steeped in indigenous tradition of the Manggaraian people, and a few reconstructed traditional ceremonial structures and incredible beauty of the surrounding rainforest have made the area a bit of an attraction for visitors. One factor that does limit the foot traffic is the fact that Wae Rebo can only be reached by a 10km trail, which with the mountainous terrain equates to a 4 hour trek by foot. The altitude tops out around 1300 meters, and farms are planted in Yellow Bourbon and Typica. Looking over the green, Typica makes up a healthy part of this particular lot, lots of large beans present. Overall, the coffee takes heat quite well, and being a washed coffee with clean preparation, roast color is even and easy to judge. There are currently 51 families who are part of this group, and together they produced roughly a single container of coffee last year.

There's strength behind the rustic sweetness found in the dry fragrance. City+ and Full City roasts pushing brown rice syrup with raw cacao and sweet leather-like accents. This aspect builds in the wetted grounds, the break producing a smell of blackstrap molasses. A cooling cup of a City+ roast shows sweetness rivaling the levels sensed in the aromatic profile. A compelling flavor of molasses and raw cacao nibs formulate this coffee's base, matched in weight by an inky body that brings to mind Hershey's syrup. The finish is marked by herbal accents as you move through the cup, like fresh tarragon or even a slight bay leaf hint. City+ and Full City roasts pull out lasting bitter and sweet qualities that I believe will hold up to some 2nd snaps as well. Full City/FC+ roasts work fantastic as espresso too, extracting an ultra viscous shot with a flavor or rich, bittersweet chocolate.
