This is from our first container of Ethiopia coffees of the year. We named this coffee "Dabub Matebya", in reference to southern washing stations in Amharic. This is from a private collection/washing station in Adado, Yirga Cheffe. The preparation of this coffee is Grade 1, which is apparent when looking at a sample. Very little defects to be found, with the sorting process starting at the red cherry and ending with a hand sort post dry-milling. Hundreds upon hundreds of farmers deliver coffee from very small farms to the washing station where it is processed. Competition in the region for cherry is quite good so farmers are paid well, especially for ripe cherry selection. It's rated at 15+ screen, but there are a few tiny beans mixed in there that may slip through grid drum roasters. We recommend giving the drum a shake before roasting to avoid any smoldering strays on the floor of your Behmor.
This is our first Ethiopian arrival of the season, and has exceeded our expectations in cup quality. The dry fragrance of Dabub Matebya is potent, an abundance of floral notes, lemon wafer, and refined white sugar sweetness. Florals become more defined, if not familiar, in the wet aroma. After all, this is a Yirga Cheffe coffee. Notes of jasmine and fresh sweet pea flowers drift up in the steam, with a sweet honey smell, and baked peach with brown sugar touch. Classic Yirga Cheffe characteristics of bergamot citrus and florals come out in the brewed cup, and the sweetness is very much like raw honey. Even in a piping hot cup you sense an exotic profile, and extreme cleanliness. Fruit notes like peach and nectarine, lemon grass and lychee syrup come through as the cup cools, and a flavor of fresh grated cinnamon and cane juice sweetness hold tight to your palate. The finish is ultra clean, black tea and fruit skins providing a pleasant, tannic mouthfeel in the long aftertaste. From City to City+ this is an outstanding brewed coffee with competition level cup quality.
