No, this isn't a sampling of pastel faux Native American bolo ties from New Mexico (har har). It's an opportunity for us to highlight the rather wide range of cup profiles represented in our current Ethiopian lineup. The Western coffees are part of an initiative we have in Ethiopia to work direct at the coop level, which we've been able to achieve with the help of a non-government organization who not only coordinated agronomists and managers for each of the coops they work with, but also had a business adviser assigned that helped the cooperative manage their debt, re-invest in quality improvements at the mill, and verifies distribution of income to all members. The profiles from these Western coffees range from ripe to pungent fruits, raw sugars to cocoa, delicate florals to deep body. Our coffees from the South are mostly Yirga Cheffe or Sidama. These coffees express dominant characteristics of florals, fruit tea, citric brightness, and extreme cleanliness in finish. That's a fairly oversimplified expectation to set, and you'll find much variation between varieties as well as variance along the roast spectrum. Each sampler will include 2 coffees from each respective region, and we'll keep a running list of the possible coffees in the below review with a link to the reviews so you can learn more about them. Please keep in mind, we plan on keeping a dry-process coffee in rotation, but pick each sampler at our own discretion and based as what is currently available in our warehouse. We do the picking, so no special requests on this one (even if you do or do not want dry process in your order - this is a "sampler"!).
