Anasora is the name of the Woreda where this coffee comes from, and also the name of the wet mill site where the coffee is processed. Regionally, it's in the Guji Zone, but not far from Yirga Cheffe, and areas where we've bought lots of great coffee in the past such as Chele'lektu and Gedeb for example. This private wet mill is one of a few operated by Mr. Edema, who has more than two decades of experience managing coffee processing operations in Guji (Tabe and Tore are two others we carried this season). The Anasora wet mill has a good source of water from the nearby river which hugs the area and provides clean water for processing coffee. Mr. Edema works with 300+ small holders in the region, buying, processing, and exporting their coffee. Anasora sits at just under 2000 meters above sea level, and many of the farms are much higher than this which is about as high as we see coffee grown anywhere. This is a dry processed coffee, and hand sorted to grade 1 standards, and the evenness in roasted coffee is a testament to this extra hand labor and care.

Rustic sweetness and dried berry tones swirl in the fragrant ground coffee. Banana bread comes to mind when smelling my lighter roasts, as well as blueberry pancakes. The wet aroma is intensely fruited with layers of dark berry, and natural dried fruits. Anasora's rustic side is most apparent in the brewed cup, as are the sweet berry notes sensed in the aroma. At City and City+, it offers a heady mix of dehydrated blueberry and blackberry fruit leather, along with woody hints, and a dark balsamic note in the finish. Anasora's sweetness holds up to dark roasting, and my Full City roast that was quite close to 2nd snaps (34F development post 1st crack) delivered profound bittersweetness, and with lingering dark fruits folded in, like blueberry chocolate ganache cake.
