Coffees from the Pedregal region are new to us at Sweet Maria's, and we're very pleased with the lots we have to offer. Our access to this region comes with the acquisition of our new coffee buyer, Aleco Chigounis, who like us, strives to build relationships with farmers who repeatedly produce sweet and clean coffees. And perfect timing as we were in need of new a new Colombian sourcing platform. The farms within Pedregal are situated at altitudes of 1700 meters and above and the coffees produced are characterized by their clean cup character and vast range of sweetness. Agua Blanca is a small hamlet within this region that is almost entirely planted with Caturra, as well as a few Bourbon and Typica trees intermixed. This year's selection process was nearly as arduous as the infamous road to Pedregal that Aleco has told us about. Tom, Aleco and myself (Dan) have poured over literally hundreds of samples in order to pick these top quality lots that we're offering. We have several lots on the horizon that should last us through to the end of the year. But that said, lot sizes range from 1 bag to 60 bags and we don't expect any of them to last very long.
"Agua Blanca" is the name of the region, but it's also a great descriptor for this coffee - lively like white water. It starts in the dry grounds, with honeyed aromatics, apricot, and dried whole bananas. There's also milk chocolate and a sweet nut aspect that verges on chocolate wafers. Adding hot water boosts the aromatics of this coffee with creme caramel, light brown sugar, and a date sugar sweetness that is reminiscent of Turkish figs. Agua Blanca is a very pretty coffee, with a delicate, Demerara raw sugar appeal. There's a honey note in the cup as well that has a waxiness to it, like what you find in honey sticks. This coffee has a silky mouthfeel, which, coupled with fruit flavors like apricot, lemon, and Asian pear, give it a gentle tea-like appeal.
