The cup is juicy and nicely fruited, but very clean as well. In different roasts around City+ level, I had flame grape, cherry, apple, and a slight red apple skin in the finish. The cup seems to intensify and sweeten as it cools, and a touch of black tea emerges in the finish. City+ is ideal.

Daniel Chaguala sells his coffee through Asoceas cooperative, where we work in a program to identify special coffees, separate them, and reward the farmer with a higher price. The first (and most important) screening of the incoming lots happens right in Herrera, where the local cupper and coffee farmer Newerly Gutierrez uses a Quest roaster. Each coffee lot, no matter how small, is kept separate and scored on its merit. I visited Herrera for the first time and it's a beautiful town set high up in a fairly remote area of Tolima. This is the second time we have found a great microlot from Daniel Chaguala's farm, so he is definitely doing something right.
The dry fragrance has floral and fruit aspects. Peach blossom came to mind the first time I smelled it. The wet aroma has a juicy fruited quality; sweet ripe orange, with peach and apple on the break. The cup is juicy and nicely fruited, but very clean as well. This is very consistent with the amazing lot Daniel produced for us last time, where it was my absolute favorite among the microlots. It has unique characteristics compared with the other Tolimas, showing how much the soil, climate, cutlivar, and methods of a particular farmer and farm express themselves in the cup.
