Roast Recommendations City+ to Full City+; this does well at a wide range of roasts, even shows well lighter than our recommendation, I just feel that balance is found at a minimum of City+.

This coffee represents a blend that is made up of some of the better lots that we cupped from the Timana area of Huila (the first photo is looking down at the town from above). We constructed this from a very small group of producers, neighboring farms in the region. They are part of a larger 30+ member association, put together in order to help with production and export of their coffees. This is the first year that we are involved with this particular group, and the samples we cupped were very impressive, and we were able to select a few micro-lots, as well as put together a custom blend from a select few. Most farms are planted in Caturra, and grown up at 1600+ meters. Processing is done onsite with hand crank pulpers, and the coffee is dried on raised parabolic beds. This year we are exploring a new avenue for Colombian coffee - well, actually we picked up a couple coffees through these folks a few years back, and this year have become reacquainted, gaining us access to some really great small farms. We're excited for this first container of coffees featuring mostly coffees from the Timana de Huila region, and will be making a trip there before the end of the year to look at other new opportunities.
This blended lot turned out quite well. It helps that we were drawing from a fairly small pool of producers, who are practically neighbors to one another. The dry grounds have a base sweetness of raw honey with a nice scent of toasted almond in the foreground. At Full City, there's a sweet basil scent too, along with dark caramel. Adding hot water creates quite a rich aroma, honey drizzled apple, demurara sugar, and even a bit of chocolate cookie. You can develop quite a bit of sweetness with this coffee, and it shows very well in the City+ and Full City range. Acidity is moderate, yet defined (like green apple), and remains intact all the way up to Full City. City+ roasts show notes of apple and mulling spices as the cup cools, sitting atop convincing flavors of dark sugar and honey. Full City roasts bring out some dark fruit notes, as well as a nice rich chocolate flavor that holds on in the finish. Body is medium, and darker roasts will make a nice, chocolatey SO espresso.
