Red apple, pear, nectarine, and blackberry emerge as the coffee cools. There is a pleasing finish of cream caramels and fine cocoa powder. Great SO espresso. City+ to Full City were our favorite roasts, but this coffee will handle Full City+.
Our third and final Colombia container for the season just landed, and we're very pleased to offer out two of the best small holder lots on Sweet Maria's. This lot in particular comes to us from Luis Alberto Ambito's small farm in the highlands of San Jose. San Jose is a small village within the greater region of Pedregal - which if you've been keeping up with this year's Colombia coffees from this area, you know they have a reputation for producing intensely sweet and clean coffee. The ability to consistently produce great lots is largely due to their personally selecting perfectly ripe cherries and then processing the cherry themselves. Overseeing the entire process really gives the farmer nearly complete control of the final product that leaves their farm. The coffee is manually depulped on hand-crank machines, ferment in tiled tanks, wash thoroughly in a second tiled tank and then dried on covered, raised beds. While simple, this process is nothing short of beautiful. There is only 1 bag to represent this particular harvest from this farm, and we're sure glad we got it. Have at it while you still can.
This lot from Luis Alberto Ambito is such a special coffee. The range of sweetness vacillates from complex sugars to fruited notes, culminating in a profile that is nothing short of beautiful. These lots from the Pedregal region have so much developed sugars in the fragrance. We thoroughly enjoy this up-front sweetness, which is expressed in the dry grounds of Ambito as raw honey. There is also a note of caramel and ginger that smells of ginger-ale. Adding hot water brings on an expansion of the aromatic profile. Notes of dark brown sugar, turkish apricot, and baked peach emanate from the crust, and the break has the syrupy essence of canned stone fruit. The cooling coffee shows fruit compexity with red apple, pear, nectarine, and blackberry. The finish is so pleasant with a strong presence of cream caramels and fine cocoa powder. This is an amazing drinking coffee and does really well in the City+ to Full City range. You could go lighter (or even darker for that matter), but we feel that the sugar development really benefits from being right in the middle ranges of roast development. Though this will make an amazing espresso, I'm not sure I would personally go that route seeing that there's only 2 full bags to enjoy!
