This particular lot comes to us from Agua Blanca, a tiny village within the Pedregal region. There may be a few dozen people living there and you'd be hard pressed to find many folks not named Penna in the hill or two that make up "town". This family carried a lot of weight around our cupping table last year, with Walter, Johan, and other family members producing many of the top lots that we've seen from the Pedregal region. This lot is comprised of three families from Agua Blanca, two of which are Pennas: Johan Penna, Alirio Penna, and Sammy Ultengo. Johan and Alirio are cousins and Sammy is one of the neighboring farmers. All three have very small farms and produce a few bags each of exportable specialty grade green coffee. We picked the top tier from each and blended them to make up this tiny, 4 bag microlot offer. Their method is traditional for the area and starts with picking some of the ripest coffee cherry that we've seen anywhere in the coffee world. They manually depulp their fruit on hand-crank machines, ferment in tiled tanks, wash thoroughly in a second tiled tank and dry their coffee gently on covered, raised beds. With farms ranging in the area of few acres or less, these folks are in complete control of their farming and processing down to the point of picking their coffee cherry themselves. Because this lot is so small, it's only being offered as 1 LB bags.
This coffee is exemplary of what we've come to expect for top tier coffees from this area. It's so sweet all the way through, and with a pristine profile aromatically and throughout the cup. The dry grounds are like pure honey drizzled on fresh raspberries, and with a touch of chamomile flower. Light roasts have a bit of dried cherry to the smell as well as the tart scent of plum and guji berry. The wetted grounds show the aromatic sweetness of pumpkin pie, loaded with brown sugar, butter and fresh whipping cream. Dark roasts are incredibly sweet too, and have an aroma of maple icing and caramel sauce - wow! So what about the cup? Thankfully, it does not disappoint. At City to City+ roast, the brewed coffee has the sweetness of honey sticks, delicate dried florals, and with complex sugar browning flavors such as caramel and butterscotch.
