The growing region in La Plata where this coffee is from, sits high above the Rio Pa©z, on a ridge across from another coffee area, Inz. This is a single-producer lot, part of a new group who have formed in this region. Se±or Trujillo's farm, El Guayabo, sits at 2000 meters above sea level, and is roughly 3 hectares planted in both Caturra and Variedad Colombia. The coffee is processed onsite using a small pulping machine, fermenting the coffee for about 14 hours to remove the sticky mucilage layer, and then drying on raised beds in covered "parabolicos" (green house structures that help facilitate even drying). This is the second lot we've purchased from Trujillo, who has become somewhat of the model grower to this La Plata association due to the exemplary quality of both physical green and cup quality. And visiting his farm, his focus on coffee quality is clear when seeing the care he's put into his newly built raised drying beds, cleanliness of processing equipment, and commitment to careful cherry selection. We purchased 13 bags in total, which is his entire middle harvest.
The dry fragrance is rife with dry spice and fruit smells: clove gum, spice cake, cinnamon bark, plum, and peach cobbler. There's a sweet cinnamon-sauce scent too, that is built up in Full City roasts, a cue taken from hot, sweet, cinnamon rolls. The wetted crust shows pronounced sweetness, like candied sugar crust, creme br_l©e and burned toffee, along with a scent of grape jelly. The brewed coffee of City+ roasts are so sweet, and with citric-like brightness that cuts through. A clove note resonates throughout the cup too, up front at the first sip, and holding on long in the finish. A rindy orange juice flavor comes up as the temp dips, followed closely by a flavor of honey-sweetened chamomile tea. The core coffee flavor is incredibly balanced in the middle roasts, bittering baker's cocoa tones kept in check by compact raw sugar sweetness. Our Full City roast saw a boost in chocolate and dark fruit flavors, plum infused cacao bar, and Scharffenberger chocolate. A wonderful brewed coffee from light to dark, and as you head toward 2nd snaps, the fruited sweetness is exchanged for more cocoa/roast bittersweetness.
