Roast Recommendations Complex at a wide range of roasts, from City to Full City

It's been a long time coming, but we finally see the return of coffee from Maximino Gutierrez (that's him in the first pic). We annually bought vacuum sealed bags of this coffee in the past, and it was consistently one of our finest Colombian offerings. This lot is a family effort between Maximino Gutierrez and the adjacent farms of his brothers and sons. They call it Finca Las Florestales, and it's gained much recognition though Cup of Excellence competitions. The family grows 100% Caturra cultivar at the end of this remote valley, at altitudes between 1600 - 1800 meters. They use a pulper machine and then finish the coffee with overnight wet-fermentation, and then a rinse in pure water, traditional small-farm Colombia processing. The key is perhaps the careful drying on the roof of their home, "Casa Elba". Herrera still sees quite a bit of instability due to the FARC holdouts in the surrounding hills, and as such isn't the safest place to visit. It brings us great pleasure to offer these 17 bags, and are happy to say we have one more shipment of this coffee on the water.
Finca Las Florestales has an intoxicating dry fragrance, raw honey, florals, and whole clove spice. City roasts smell complex, and edging toward Full City sees a nudge upward in honey smells as well as a nice baked apple scent. Pouring hot water, and this coffee's aroma gravitates toward caramel crumble fruit crisp, raspberry preserves, and very slight floral hint. Acidity is a focal point in the brewed coffee, graceful and succinct, and even when hot a malic vibrance is sensed. The sweetness is like raw cane juice maple frosting, syrupy, and lasting in the finish. As this coffee cools, City roasts show flavors of berry jam, fresh squeezed orange juice, and a floral kaffir lime note. It's a refreshing set of flavors, and remarkably juicy as the temperature dips. Full City roasts retain the complex aroma, and cup flavors vacillate between cacao nibs and ripe plum, and with immense body. This is truly a highlight Colombia, showing as such at a wide range of roast levels.
