Omaira Munoz is a prodcuer in the Bruselas municipality of Pitalito, Huila. Her farm is 5 hectares in total and sits at 1700 masl. Omaira has planted 100% Caturra varietal on her farm and processes in the traditional Colombian smallholder fashion. After selecting cherry she manually depulps them on a handcrank device, allows the beans to ferment overnight and then washes them in the same tank. She then takes her beans to a raised, parabolic bed where they dry over the course of 7-10 days. Bruselas is an intriguing region to us as quality is typically very high. We hadn't bought from the region in a couple of years but our purchase from Omaira marks our return. Look for more from Bruselas and the greater Pitalito region thoughout the course of the year.
Omaira Munoz is a bright coffee. Red berry, toasted sugar and baker's cacao rise from the fragrance of the dry grounds. The break shows fresh cedar and italian parsley along with toasted hazelnut. Even warm the acidity leaps out of cup in a pleasantly tart fashion. Green grape and granny smith apple notes are most discernible at the City level with Bosc pear more predominant at the City+ level. Omaira has a buttery mouth feel to it, maybe even like fresh cream. As it cools an orange creamsicle flavor lingers in the finish along with chocolate syrup. This is a coffee that needs a little bit of extra development to accentuate the mouth feel and sweetness, as well as to balance the acidity. A Full City roast level will make for an exceptional espresso.
