Aguas Claras is a single-producer farm from the Aguas Claras vereda of Pedregal de Inza. This comes from a strong association in the region, supporting farmer members with agronomy education and assistance, milling support, and of course benefitting from collective bargaining power. The region is known for a washed coffee tradition, one which includes de-pulping their own coffees with hand-cranked machines, overnight fermentation, and then laying the wet parchment coffee to dry on raised, covered beds. The last aspect is key in facilitating even and gentle drying of the coffee, minimizing cracks in the protective parchment barrier. This is a quality focused effort, separating lots by day and then organizing micro-lot offers by cup quality. This lot is a total of 14 bags, and only being offered in 1, 2, and 5 LB increments.
Aguas Claras is loaded with honeyed sweetness, reaching floral levels in the aroma. It has a raw honey smell in the dry grounds, hints of dry apple popping out at lighter roast levels. Adding hot water builds more of a butter toffee smell, with a hint of dried wild flower on the break. Even piping hot, you get a sense of this coffee's sweetness and acidity in the cup, both in high measure. Honey and graham flavors are matched by crisp, malic acidity, and black tea notes come out in the finish. Sweetness only builds as the coffee cools, as well as top notes of tart currant, and tea cake - even a tinge of citrus zest. City+ to Full City brings on a really milky-sweet chocolate flavor, enhanced by weighty body. The levels of sweetness, body, and chocolate that come with a Full City roast level (maybe even FC+) make this a great Colombia option for single origin espresso.
