Farm Description

This custom decaf was processed at Swiss Water, in Vancouver Canada. The coffee is subjected to an extremely gentle water-processing technic, where much of the volatile compounds affecting aroma and flavor remain intact. This particular decaf is from a coffee washing station in Tanzania (or "CPU" - coffee processing unit) located in the town of Iyula. "Iyula" is also the name of the Farmer Business Group (FBG), essentially a cooperative effort by smallholder coffee farmers to pool resources, processing and marketing of their crop. In a place like Tanzania, where small holders may only produce a few bags of coffee, FBG's give farmer members the opportunity to combine lots together, which in this case, affords them the resource of processing coffees on big machinery rather than by hand - a tedious task that would be necessary for processing small amounts of coffee. The station sits in the Mbeya highlands, around 1750 meters and coffee is grown up to 2000 meters. Like much of the region, the cultivar grown is all bourbon, and proves extremely versatile in both roast and brew methods, and makes for a particularly sweet decaf coffee!

Cupping Notes

The dry grounds have a malty sweetness to them, with baking spice notes that reminds me of pumpkin spice bread. Fruited notes come into focus in the wet grounds, along with a cocoa tone as well. The break is particularly sweet, showcasing a fruited/pectin-like sweetness, especially in our City+ and Full City roasts. The cup is quite impressive, very un-decaf, and showing clean sweetness all the way through to the finish. Notes of honey and nut come through in a hot cup, shifting into citrus and brown sugar sweetness as the temperature begins to fall. Layers of dark chocolate highlight the cup of middle-range roasts, near fruited sweetness, like Scharffen Berger. A rye grain note lie just beneath the surface, and the cool cup alludes to apple juice in feel and even top note flavor. Amazing bittersweetness for decaf at Full City, the kind of cocoa-to-malt flavors that will bode well with milk, both as espresso and brewed coffee drinks.
