Farm Description

With Guatemalas still cupping quite fresh and Colombias just landing, it's the perfect time of year for us to do a Central and South America blend. This particular blend is made up of three different coffees - 1/3 Colombia Timaná Principales Lotes (Huila Department), and the other 2/3 small-producer coffees from Hueheutenango (lovingly referred to as "Huehue"), Guatemala. Both of these coffees expressed sustained sweetness and thick body, and together are an extremely versatile decaf blend. This is another custom decaf from Swiss Water in Canada, where a gentle water process is used to removed the caffeine content without disrupting much of the volatile compounds that affect flavor and aroma.

Cupping Notes

The dry fragrance is loaded with a smell of caramelizing sugars, toasted and sweet, and at City+ you get a sense of dried fruit top notes. With the addition of hot water, a smell of vanilla creme caramel comes up in the steam, so sweet and creamy, and the break shows a slight note of sorghum syrup. The cup is super bodied, packing a bold, unrefined sugar sweetness, which at Full City goes a bit rustic, like brown rice syrup. City+ shows nice raisin and spice top notes, cinnamon and all-spice, adding nice complexity to the cup. There's a bit of rye bread/decaf flavor that starts to show as the cup cools, but is overpowered by aforementioned central cup characteristics. Overall a nice balanced decaf, sweet and with a relatively clean finish, and works great in both brewed and espresso applications.
