Farm Description

This is one of our custom decaf coffees that we had processed by the folks at Swiss Water up in Canada. This lot turned out exceptional, and is a blend of a dry-processed lot from Konga (near Yirga Cheffe town), as well as a washed coffee from the Michiti cooperative in Kaffa. We've been selling both coffees as non-decafs this season, cupping over 90 points each, making for quite the decaf blend. There is a great benefit to sending off coffees you already have, affording some insight into what what's to come. Often 'spot' decafs provide very little provenance, and we take pride in knowing where this coffee comes from, not to mention the stunning cupping quality. Dry-processed Ethiopians make great decaf coffee, and blending with a washed coffee wound up being quite complimentary in the cup.

Cupping Notes

This Kaffa-Yirga Cheffe blend is characteristically "Ethiopian" in flavor, fruits, florals, and sweetness we're not used to tasting in decaf coffees. The dry fragrance is filled with fresh berry smells and a caramel sweetness, along with a smell of stewed fruits that carries over to the wet aromatics. Adding hot water really intensifies this set of smells, and the break lets off a convincing floral note. This is a really complex brewed cup of coffee, and not just for a decaf. City/City+ roasts have fresh berry flavors - raspberry, blackberry, and blueberry - and floral tropical fruits like passion fruit and guava. Both of these coffees as non-decafs are complete powerhouses, and so it's really no surprise that the decaf'd version tastes this "big". Even close to Full City, there's convincing flavors of cooked stone fruits and berry syrup. The dry-process element builds quite a bit of body in the cup, and sweet fruit flavors hang on in the long finish. If you stick close to City+, you can expect a malic-to-tartaric acidity too, adding structure to the multitude of top notes. All in all a really fantastic decaf, and a nice option for those looking for something outside "routine" options from the Americas.
