El Salvador Finca Himalaya

Farm Description

Finca Himalaya is located in Apaneca at 1,500 meters and planted primarily with Bourbon. The coffee was processed at the El Divisadero mill owned by Mauricio Salaverria which is located in Ataco, and then dried 100% on african beds which aided in a more even drying process using both sun and air. This coffee was actually dry milled (hulled) at the beneficio at El Manzano. Mauricio has been involved in coffee all his life thanks to his parents and grandparents, who where all devoted specialty growers from western El Salvador. Mauricio now manages five small farms. We met Mauricio and cupped some coffees from different tablons from Finca Himalaya when were at Finca El Manzano working on the processing experiments. This particular lot is another great representation of classic bourbon characteristics from El Salvador, which had a stellar crop this year.

Cupping Notes

Stone fruit is balanced well with cocoa and honey in the warm Full City cup, while the lighter roast has more of the crisp apple and pear sweetness and acidity common in these clean and well prepped El Salvador bourbons. The dry fragrance on the City roast shows apricot with just a bit of cinnamon spice while at Full City there's a more prominent malted sweetness, even more so on the on the wet aroma. The break on the lighter roasts is bright and sweet with the tangy apricot and just a bit of lime that makes it a little punchier. There's a short, tart finish in the lighter roast which has a fairly condensed body, but as the cup cools it's clean and clear with that density taking on a more light cream texture which is balanced by the crisp acidity. The Full City roast maintains it's cocoa and honey finish as it cools, yet laced with a mild sweet yet savory peach. Roasting this again right at City+, the peach notes are much more potent in the cool cup while still having the cocoa and honey finish with just a bit of sweet spice.
