Farm Description

The Castro Zeledon farm is in the highlands of Asseri de Tarrazu. There's no shortage of great altitude in Tarrazu, and this farm sits at about 1600 - 1680 meters. It's planted mainly in Caturra and Catuai, and the total production is about 15 bags annually, with 8 being micro-lot quality. This is a tiny farm, we're talking 1.5 hectares (less than 4 acres), and a remnant of the original Castro Zeledon family farm. The owner, Carlos Montero is one of many descendants of the original Zeledon coffee family, farming in this area for well over 100 years. Since there's no mill onsite, this coffee is brought down to the Rio Jorco Estate where it is fully washed and processed.

Cupping Notes

The dry fragrance has a processed sugar scent, like demurara, at City roast level. There's also a bit of raw honey and walnut too, which comes on strong in darker roasts as well, and along with a note of baker's cocoa. Adding hot water brings on a basic-but-sweet smell of caramel and toasted almond in light roasts, that's simple, and quite pleasing really. Full City roasts have a bit of fruit as well, that lies somewhere in the range of apple/pear, and with a slight presence of loose leaf black tea. The cup is oh so approachable and with a 'cripsness' that is expressed in flavor and finish. Light roasts have a nice praline nut flavor to them - roasted almond covered in caramelized sugar and cinnamon. It's sweet, and with a silky mouthfeel. The acidity is like black tea, clean and perceptible, without being over the top. There's a bit of apple juice flavor too that is more prevalent in the Full City roast range. This coffee is balanced, and definitely on the 'basic' side of things, but in the best of ways - a defined, deep sweetness, slight flavor of roasted almond, and refreshing acidity. A great brewed cup of coffee.
