Farm Description

This coffee represents a blend that is made up of some of the better lots that we cupped from the Timana area of Huila (the first photo is looking down at the town from above). We constructed this from a very small group of producers, neighboring farms in the region. They are part of a larger 30+ member association, put together in order to help with production and export of their coffees. This is the first year that we are involved with this particular group, and the samples we cupped were very impressive, and we were able to select a few micro-lots, as well as put together a custom blend from a select few. Most farms are planted in Caturra, and grown up at 1600+ meters. Processing is done onsite with hand crank pulpers, and the coffee is dried on raised parabolic beds. This year we are exploring a new avenue for Colombian coffee - well, actually we picked up a couple coffees through these folks a few years back, and this year have become reacquainted, gaining us access to some really great small farms. We're excited for this first container of coffees featuring mostly coffees from the Timana de Huila region, and will be making a trip there before the end of the year to look at other new opportunities.

Cupping Notes

This blend was constructed with coffees showing slightly more fruit characteristics. I wouldn't categorize it as a "fruity" coffee per se, but fruited top notes and acidity play an important role in the profile. The dry grounds have a base sweetness of raw honey accented by dried cherry, and subtle spice notes. Adding hot water creates quite a rich aroma, honey drizzled apple, cherry pie filling, and chocolate richness on the break. You can develop quite a bit of sweetness with this coffee, and it shows as flavor of honey in the City+ and Full City range. The acidity is tartaric, like green grape, and perceived all the way into Full City territory (though a bit muted). City+ roasts show notes of Golden Delicious apple, yellow cherry, and mulling spices as the cup cools. There is a chocolate element that sits somewhere between milk chocolate and some bittering cacao in the finish. Full City roasts bring out plum-like fruit notes - juicy sweetness with a slight tart aspect - as well as a nice rich chocolate flavor that holds on in the finish.
