Farm Description

This micro-lot comes from a single producer in the Herrera municipality, within the greater Tolima department. So many great Colombian coffees come out of Tolima, some of our favorite through the years. It's also one of the more beautiful and remote regions we've visited, and due to it being one of the last FARC holdouts, an area less and less travelled. This coffee comes from Finca Los Cristales, a 3.5 hectare farm in the sub-municipality of Rio Blanco. We bought two lots from this producer, this one is specifically for Coffee Shrub. It was purchased through an intermediary who gained access to a few of coffees sold through the local cooperative in the region. It's been a tough region for us to gain access to coffees, and navigating the logistics of consolidating with the rest of our coffees coming from Timana proved to be a bit tricky, ultimately worth it in the end. We paid a premium for this lot too, one that was transferred directly to the farmer as soon as his coffee was delivered to the dry mill in Medellin.

Cupping Notes

What a sweet smelling coffee, honey and creamy nougat smells all through the aroma. The dry fragrance has a floral, red honey smell to it, which shifts toward baklavah pastry when adding hot water. And the cup echoes these elements, City+ roasts boasting honey, fresh apple, and a sweet pastry dough flavor. It's a nice balance of flavors, tied together nicely by a cider-like acidity. This is a versatile coffee in the roaster, City roasts being a tad brighter than this description and with honey/grain flavors. Full City build flavors of honey and cocoa, and along with mild fruit notes and cider-like acidity, fill out the thick body. These deeper roasts make for great SO espresso too, chocolatey sweet, and viscous body.
