Farm Description

Loma del Solado is the name of a mountain crest in the Department of Nariño, a ridge that threads it's way through the growing areas of Cartago, and Buenoe Aires. This is a custom blend of seven different coffee farms in these two regions, benefitting from the high altitude of the steep mountain slopes. This part of the country hugs both the Pacific Ocean and Ecuadorian border, and unlike most other growing areas in Colombia who have two harvests each year, generally has one single "main" harvest. The middle harvest, or "mitaca", is very very small, and does not generally produce exportable volumes. Most farms in this area are right around 2000 meters above sea level, and planted in a mix of Caturra, and the disease-resistant Variedad Colombia (F4 and F6 varieties). You see some Typica and Catimor trees here and there, but no real hectarage. This is a wet-processed coffee, most farmers using old style hand-cranked pulpers, fermenting and washing in the same tank (the first pic is of a dual-use tank), and then drying out on raised, covered beds.

Cupping Notes

Loma del Salado's sweetness is understated. Brown sugar and panela smells come in waves in fragrance and aroma, and the steam delivering the apex of sweetness, with burned toffee and caramel sauce filling the air. Flavors found in the cup are right in line with the expectations set up front, that caramel and toffee aroma carrying over into the cup flavors, and along with muted roast tone, concoct a pungent sweetness that's like crispy creme brûlée custard topping. City and City+ produce more than convincing level of sweetness, and the layers of raw sugar give way to subtle dried apple and pear notes, a mild malic-like acidity coming through as the cup cools.
