Farm Description

This single producer coffee comes from the farm of Doña Flor located in the highlands of Vereda San Francisco de Alto, one of several coffee farmers who are part of a small association we're buying coffee from in La Plata, Huila. La Plata lies in the foothills of the Cordillera Central mountain range, the farms in this group spanning a range of 1800 meters to 2000 meters above sea level. The average farm size is about 2 hectares with less than 10,000 trees planted, Caturra being the dominant cultivar grown, with some Variedad Colombia, and Typica mixed in. This is our second round of coffees from this particular farmer group, a cooperative of sorts made up of about 25 families and growing. Farmers deliver their coffee to a central location in La Plata, where it is kept separate by processing batch. We taste samples of these process batches that represent anywhere from 30kg to several bags of coffee, and then decide which lots to blend together. Often, the bag amounts are on the small side and so it makes sense to blend a few together by cup profile so as to have a larger amount of coffee to offer to our customers. This particular coffee is a total of 12 x 70kg bags representing the bulk of Doña Flor's harvest.

Cupping Notes

With a name like "Flor", it's hard to not have high hopes for florals in the cup. The coffee lives up to her name, and the floral aspects translate as raw honey and chamomile rather than fresh flower aromatics. The dry fragrance of City roasts is intensely sweet, with perfumed spice smells, tea-like florals, and tropical fruit accents. Intensity builds when adding hot water, and the wetted crust has a lingering sweetness of butter toffee, and breaking through the crust releases a lovely wildflower note. We roasted this coffee to City and Full City, which both produced incredibly sweet cups. Our City roasts were light and bright, highlighted by a tart-to-sweet cranberry note, and base raw honey sugar sweetness replete with a honey comb aroma. Mace and saffron spice notes accent the cup, with wonderful hints of floral tea in full bloom as the cup cools in temp. At Full City, the fruit flavors have a ripeness like grape and plum at their peak, and with a molasses sweetness underneath that holds on long in the aftertaste. This coffee from Doña Flor is so versatile, promising uncompromising sweetness from light roasts to darn-near second snaps, Full City-to-beyond roasts doubling well as espresso.
