Farm Description

Finca El Silencio is a small-holder farm in the Inza de Cauca region of southwestern Colombia. This region is rife with small-holder farmers like Señor Manuel, who operates El Silencio, growing coffee on much less than 5 hectares of land and using hand-crank pulping machines to process their coffee. Most folks in the region process batches daily, meaning all the coffee from a single day's harvest is processed by itself - not mixed in any way. The coffee cherry is pulped, and then laid out to dry in covered "parabolic" raised drying beds. It's this attention to daily selection and processing that helps with controlling of quality - on the producer's end, and on our end, as we are able to taste separate day lots as opposed to a mix of quality that comes with blending multiple day's harvests. This is an 8 bag lot, one of the smallest in the container, and also one of the higher scoring coffees of this group.

Cupping Notes

Tropical fruits, thick caramel sweetness, spiced essence - it's a shame this coffee is only 8 bags. The dry fragrance has a dehydrated pineapple smell to it, sweet and tropical, along with suggestions of blackberry, walnut, and a delicate tea note too. Once water is added, the sweetness turns toward creamy caramels, mixed with much of the aforementioned fruit, culminating in a baked tropical pastry smell. Forward fruit notes continues to be an integral part of the cup profile of City to Full City roasts. Our City+ roast showed flavors of mandarin orange, slight-underripe blackberry, and pineapple juice. There's a tannic/bittering aspect too that echoes grape skins, or pink grapefruit. Tea notes ring out through the finish, and are rounded out by indications of cardamom spice. Full City roasts are syrupy sweet, building a chocolate/roast flavor and is paired with dark fruit flavors of plum and grape. These darker roasts make exquisite espresso shots - a blend of stewed dark fruits, cola, 70% dark chocolate bar, and weighing so heavy on the palate.
