Farm Description

The town of San Agustin is located in the southern corner of Colombia in the Department of Huila. This particular coffee is comprised of several tiny lots from the area, which we selected over the course of a few to the area as well as extensive cupping sessions here in Oakland. San Agustin is a great area for altitudinal coffee, with farms ranging in the 1600 - 1850 meters above sea level. There's prime coffee growing conditions in this area and the fact that it is in relatively close proximity to the equator means that we can expect harvests nearly year round. Most of the farms in San Agustin depulp their cherry using manual, hand cranking depulpers. This is an example of the rudimentary tools that are used, but with clean execution that is apparent in the resulting cup quality. We've put a lot of work into this particular area, as well as the surrounding municipalities of Narino and Cauca, and we're very pleased with the resulting selections.

Cupping Notes

From start to finish, this lot of San Agustin has such a dynamic sweetness filled with developed sugars and an array of clean fruits. From the get go, the dry aroma is perfumed with a smell of ripe raspberry and honey, as well as an underlying note of all-spice. The aromatics get quite a boost from adding hot water, and smell drenched of liquid brown sugar, and with a chocolate/caramel scent that reminds me of tootsie rolls. Deeper roasts are reminiscent of fresh baked cinnamon rolls - butter ,cinnamon, sugar and raisin. As you probably figured, the cup is very sweet and has a nice refreshing quality to the acidity that runs through the profile. There's an effervescence in lighter roasts that has an apparent, but not over the top citrus-like quality. City+ roasts taste of pear or apple juice, and with body to match. As the cup cools, flavors of cherimoya, lychee, and lemon emerge. Full City roasts will make a great SO espresso, and as a cup of coffee the sugar-aspect verges on burned caramel. The finish is pleasing, like black tea with lemon, and will leave you longing for that next sip.
