Farm Description

Isidro Trivino's Finca Buenavista is one of several small family-run farms we've begun to do business with this year. He is part of an organization in Timana, whose purpose is to help increase farm output and export out of the country. Finca Buenavista is a small operation, 2 hectares total, much of it planted in Caturra, with a bit of "Variedad Colombia" as well. It sits in the hills of Camenzo, Timana at 1750 meters, great altitude for the region. The coffee is pulped with hand crank machines, naturally fermented, and then dried on raised beds. This last part is crucial in helping to keep the parchment intact, providing a layer of protection for the beans inside. This year we are exploring a new avenue for Colombian coffee - well, actually we picked up a couple coffees through these folks a few years back, and this year have become reacquainted, gaining us access to some really great small farms. We're excited for this first container of coffees featuring mostly coffees from the Timana de Huila region, and will be making a trip there before the end of the year to look at other new opportunities.

Cupping Notes

The dry fragrance of this lot from Isidro Trivino are bursting with buttery brown sugar smells, caramel sauce and creme brûlée, and City+ roasts have a cinnamon spiced scent of apple cider. The apple scent really blossoms in the wet grounds, with a whiff of apple juice and herb tea, and a thick scent of caramel candy that's quite memorable. Both our City and Full City roasts cupped so well, we're very happy with the versatility in the roaster. Part of this is due to a brilliant, tart apple-like acidity that makes a lasting impression even at the darker roast levels. And the sweetness changes from raw cane juice in the lighter roasts, to panella sugar as you approach FC. Fruit notes shift with roast running the range of plum, apricot, grape, and even slight tropicals. Full City roasts also develop a nice bittersweet cocoa flavor, filling out the middle and end of the profile. The finish is so clean, as is the overall profile expression, with easily identifiable flavor attributes.
