Farm Description

This micro lot is from farmer Luiz Paulo Pereira, who operates IP Farm in Carmo de Minas. The area allocated for coffee farming is right around 70 hectares. The name Sertao Group is synonymous with coffee production in the area, as they were the first to cultivate coffee in the Minas Gerais region of Carmo. This family has a 100+ year history of growing coffee in this area, and the Pereira family lots grace the COE finals list year after year. There are several varietals grown at IP, but this lot is a separation of entirely Yellow Bourbon. Unlike the other lots we picked up from IP Farm, this one is pulp natural, which adds an element of cleanliness to the cup profile.

Cupping Notes

This micro lot has the body, dark sugar sweetness, and aspects of nut and chocolate that you'd expect from a Brazil. But the pulp natural process also adds a touch of acidity and cleanliness, both welcome characteristics. There's a smell of cinnamon cookie, like snicker doodle, with a touch of walnut. Deeper roast levels take on chocolatey cacao nibs and roasted almonds. The wet grounds have a potent smell of dried baking spices - cinnamon and ginger - with baking brown sugars and walnut. The cup varies quite a bit along the roast spectrum. City+ roasts have a nice malt sugar note with flavors of hazelnut, and dried apple, as well as muscovado sugar and cinnamon stick. There's even a gentle, but present acidity, especially in the City+ range - malic and under control. Full City roasts show very chocolatey, and have a healthy dose of raw cacao nib flavor as well. Those who enjoy a heavy roast will appreciate this coffee's pairing of chocolate roast tones and raw sugar sweetness (also great for those who enjoy milk drinks!). Like most Brazil coffees, this is very versatile in the roaster and shows well under various brew methods. Great espresso on its own, or as a blend component.
